Whenever my mother didn’t know what to make for dinner for us growing up, she would turn to this tuna potato salad. This is the kind of recipe to make when you have many to feed. Not only is it delicious, it is also hearty and fills you right up. And, this is a very affordable dish to make, a perfect way to feed your family for less.
What also makes this a great dinner recipe is its convenience. This is a simple one-pot meal that can feed an entire family and no need for a side dish! Can we talk about the easy cleanup, YES PLEASE! 🙂
This recipe is all about the preparation, that is where you will spend most of your time and effort. As soon as your ingredients have been prepared, the rest of the recipe is a breeze and takes a short time to make. Once your potatoes have cooked, all you’re doing is adding everything into the drained pot of potatoes and mixing it all together until it has all been blended well.
Mom also flavours the potatoes as she boils them. She does this by adding whole yellow onion and garlic cloves. She slices the onion and garlic almost all the way through the centre, keeping them still in tact, then places them in the pot with potatoes as they cook. After the potatoes have cooked, the onion and garlic is removed and discarded.
You will notice this recipe makes quite a large salad, this is the way it was done at our house. It was purposely made this way because we knew how incredible the leftovers would be! When mom made this, we knew we’d have this yummy salad to last us the following days and we were excited about that!
The next day, you will have a leftover salad that has been infused with even more flavour – the olive oil would have really worked its magic at this point. Of course, if you prefer, you can also cut the recipe in half to make fewer servings.
Feel free to modify the recipe to your liking – it is very versatile. For instance, some of my family members top the salad off with tomatoes. You can add or remove to this salad to reflect your individual preference.
A yummy tip we learned from mom for this recipe is to add a few splashes of apple cider vinegar to your individual dish. The vinegar really wakes up all the flavours and freshens the salad up nicely. I encourage you to try this as well, but it is an optional part of this recipe.
PORTUGUESE TUNA POTATO SALAD
This is an easy one pot meal!
This recipe makes a large salad and leftovers are incredible!
- 6 (7-ounce) cans of tuna, drained and flaked
- 1 bunch parsley, chopped
- 1 jar (375 ml) pitted Kalamata olives, sliced
- 6 hard-oiled eggs, chopped
- 2 large Spanish onions, chopped
- 2 small yellow onions
- 2 garlic cloves
- 1 bag of white potatoes, peeled and chopped
- salt, to taste
- extra virgin olive oil, to taste
Place potatoes in a large pot. Peel yellow onions and garlic cloves and slice each down the middle (not all the way through). Add yellow onions and garlic to pot of potatoes to flavour potatoes as they boil. You will remove yellow onions and garlic cloves once potatoes are cooked. Fill pot with cold water, add salt to your taste, and bring to a boil. Cook potatoes until fork tender.
Meanwhile, sauté onions in extra virgin olive oil. Cook until translucent.
Once potatoes are tender, drain and remove/discard of yellow onions and garlic cloves.
Add onions, tuna, olives, parsley, and eggs to potatoes, mixing until blended well. Add extra virgin olive oil to potatoes, to your taste, again mixing until well blended.
Garnish with some parsley and whole olives.
- I used russet potatoes for this recipe, but you can use a kind of your choice.
- Optional: Top each serving with a bit of apple cider vinegar, to really make the flavours pop.
