- 1 cup uncooked organic whole grain quinoa, rinsed
- 1 can (19 oz) black beans, drained and rinsed
- 1 small yellow onion, diced
- 3 tablespoons extra virgin olive oil
- 3 garlic cloves, minced
- 1 chicken bouillon cube
- 2 cups water
