I’m so excited to be sharing this recipe with you today!  This is one of my all-time favourite snacks that my mother made for us growing up, and continues to make now.  My mother grew up eating these in Portugal and let me tell you, these Portuguese Roasted Pumpkin Seeds are out of this world!

They are so delicious – the ultimate perfect snack to have any time of the day, and year.  Being as it is fall though, it is especially fitting that I share this mouth-watering treat with you all today.

As I mentioned above, this is my mother’s recipe – all credit goes to mama for these.  I truly have been blessed with a mother that is such an incredible cook.  I have to say, my mother is the best home cook I have ever known, of course grandma is high up in the rankings as well! 🙂

With my mother’s permission of course, I am sharing with you her recipe for Portuguese Roasted Pumpkin Seeds or pevides de abóbora, as we like to call them.




Not only are these totally yummy, you only need 4 ingredients to make them.  Yep, that’s right, F-O-U-R.  The key to this recipe is the sweet pimento paste…YUM.

This paste is used in so many of our family’s recipes, so I highly, HIGHLY, encourage you to buy yourself some.  Truly, the recipe options are endless with this delicious paste.

Now, let’s get started:

Portuguese Roasted Pumpkin Seeds (pevides de abóbora)

Place your pumpkin seeds in a bowl.  Then add your saltyour garlic powder and pimento paste to your pumpkin seeds and mix until your seeds are coated well.  The amount of salt you use will be to your taste, you can start with less than the amount I’ve indicated here and add more later if needed.

Next, line a baking tray with parchment paper and spray parchment with cooking oil.  Place your pumpkin seeds onto the baking tray, using a spoon to spread them in a single layer.




Preheat your oven to 350 degrees Fahrenheit, and roast for 25 minutes, stirring seeds every 10 minutes.

And that is it – how much more simple can it get, really?

These are a great little snack to have already made in a jar at home, to satisfy your craving for a bit of salty savoury treat any time of the day.

Ingredients
  • 1 ½ cups raw natural pumpkin seeds
  • 2 tablespoons sweet pimento paste
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt (or to taste)
Instructions
  1. Add salt, garlic powder and pimento paste to pumpkin seeds and mix until seeds are coated well.
  2. Line a baking tray with parchment paper and spray parchment with cooking oil.
